Cherry pineapple dump cake is an all time favorite for me and definitely one for a southern baker’s recipe box! If you’re not comfortable referring to it as a ‘dump cake’ you could always call it a cobbler. You won’t believe how easy this recipe is. The only problem I’ve run into in the UK is that a box cake mix isn’t as readily available and they are usually quite costly so I decided to make the cake mix myself.
Ingredients: 1 large can crushed pineapple, 1 can cherry pie filling (or blueberry), 1 box cake mix (yellow or butter recipe) if you can’t find follow my recipe for the cake mix below, 1 stick of butter (113 g).
Ingredients for cake mix if needed: 2 1/4 cup plain flour, 1 1/2 cups granulated sugar, 3 1/2 tsp baking powder, 1 tsp salt
Preheat oven to 350f (177c) and grease a 9×13 baking dish. Dump pineapple in pan and spread out evenly. Pour cherry pie filling on top of the pineapple and sprinkle the cake mix over the top. Place thinly sliced butter over the top of the cake mix covering it all and bake for about an hour. Serve warm with custard or ice cream.
