Homemade Potato Soup

This is the best soup for a rainy or chilly, winter day! It’s easy and you can modify the recipe by adding other vegetables if you like – maybe carrots, celery, etc!

Ingredients: 6-8 medium potatoes, 1/4 cup butter, 1/2 cup flour, 6 cups milk, 2 tsp chicken bouillon, 1/2 tsp salt, 1/4 tsp black pepper

Peel and cube the potatoes. In a medium pot boil the potatoes for about 10 minutes until they start to get tender. In a separate pan over medium heat melt the butter. Add the flour and cook while stirring for about 1 minute. Add 3 cups of milk and stir until the lumps are out of the flour mixture. Add remaining 3 cups of milk and bring to a boil over medium-high heat. Continue stirring almost constantly to prevent it from scorching! Turn off the heat and add the chicken bouillon, salt, pepper and potatoes. Enjoy!
