I had fun making reindeer chow for my customers at Christmas this year even though this is a snack you can enjoy year round! I’m pretty sure this is something mainly enjoyed in the south but it’s such an addicting snack I thought it would go over well at the local pubs! I couldn’t find rice or corn chex in London so I substituted with Shreddies (wheat chex).
Ingredients: 9 cups Shreddies (or combination of wheat, corn and rice chex), 1 cup dark chocolate chips, 1/2 cup peanut butter, 1/4 cup unsalted butter, 1 tsp vanilla, 1 1/2 cups confectioner’s sugar (icing sugar)
Measure chex and pour into a large bowl. In microwave, melt chocolate chips, peanut butter and butter (uncovered for approx. 1 1/2 minutes on high) Stir until mixture is smooth and stir in vanilla. Pour over chex and carefully stir until well coated. Pour into a sealable plastic bag and add confectioner’s sugar. Seal bag and shake well until the mixture is well coated. Spread on wax paper to cool and store in airtight containers.
