I promise you this this white chicken lasagna recipe is a crowd pleaser! I’ve made this so many times for friends and haven’t come across anyone who didn’t love it. This is one of my more time consuming recipes but well worth the work you’ll put into it. It takes me about an hour to prepare and then it needs to bake for approximately 40-50 minutes. As a side note this recipe is based on a typical American sized lasagne dish, which is 9”x13”. When making it in the UK I have to triple the number of lasagne noodles because they seem to be 1/2 the size of the US ones.
3-4 skinless chicken breasts, 14.5 ounces chicken broth + enough water to equal 4 cups, 1/4 cup butter, 1 pound sliced mushrooms, 1/2 cup white wine, 1/2 tsp tarragon leaves, 1/4 cup butter, 5 tbsp. flour, 1 tsp salt, 1/4 tsp white pepper, 1/4 tsp ground nutmeg, 2 cups half and half (single cream), 9 lasagne noodles (or 18 lasagne noodles if you’re making this in the UK) cooked al dente, 3/4 pound Swiss, Parmesan and Mozarella shredded cheese (you can mix all 3 or just your favorite).
Preheat oven to 350f (177c). Cook chicken in the broth and water until tender. Strain and reserve the chicken broth. Once chicken is cooled shred it. Melt 1/4 cup butter in a frying pan, add mushrooms and cook. Add wine and tarragon, and cook until most juice has evaporated. In a medium saucepan, melt 1/4 cup butter over medium heat. Blend flour, salt, pepper and nutmeg into the butter until bubbly (stirring). Remove from heat and slowly stir in 1/2 and 1/2 and 2 1/2 cups of leftover chicken broth. Return to heat and stir until smooth and thickened. Add mushrooms and chicken to the white sauce and stir well. In a lasagne dish layer noodles, sauce then cheese. Repeat 2 times. Bake uncovered for 40-50 minutes (watch to make sure the cheese doesn’t burn on top). Serve with a salad or green vegetable and bread.
